Alchemy Agencies is distributing TIC Gums’ TicaPAN line of coating agents that are replacements for gum arabic.

Gum arabic (also known as gum acacia) has historically been the primary hydrocolloid used in panned candies and chewing gum. Although it is widely used, it is also difficult to source and can be subject to unstable pricing due to weather and political instability.

The range is suitable for binding and strengthening the sugar and sugar-alcohol shells in panned confections and for enrobing nuts, malt balls, chocolate candies and other oil-containing centres.

TicaPAN 311 is a drop-in replacement for gum arabic and acts as a binder for sugar and sugar-alcohol syrups used in hard and soft confection coating and panning. The company claims it has comparable crystallisation, binding and viscosity properties to gum arabic and gives a crunchy texture.

TicaPAN Quick Crunch is a gum arabic substitute that dries quickly and produces a strong shell.

TicaPAN Seal is a film former that creates an oil and oxygen barrier for panned nuts, chocolate candies and other oil-containing centres.

The range is sugar free, non-cariogenic and available in non-GMO form.
