Weastern wonders and more: the food trends shaping the industry

FrieslandCampina Professional has published its fifth annual Trend Report, highlighting three global industry trends: Weastern Wonders, Conscious Curiosity and Sensory Novelty. The report includes ideas, recipes and applications for food professionals as well as micro-trends, business insights, interviews with industry experts and food creations.

The 2023 Trend Report explores insights and recipes for dairy and non-dairy solutions in cream, cheese, milkfat, creamers and whipping agents. Alongside the three macro-trends, the report identifies eight microtrends that may be solutions for industrial-scale production.

The trends

Weastern Wonders

The borders between cuisines are being blurred and crossed at a pace faster than ever before. Culinary influences from the East and West are meeting to create food ideas combining tradition and innovation. For example, the refinement of Japan and the innovativeness of Korea can be combined with the traditional techniques of the French and the classics of Italy. Weastern is emerging as a new cuisine on an industrial scale among demand for hybrid creations.

The three microtrends emerging from this are Frasian Pastry, Hybrid To Go and Global Mix.

Conscious Curiosity

Concern regarding ecological footprint and health is growing, as is demand for lighter versions of foods which retain the taste of original versions. In line with this trend and rising price levels, plant-based alternatives are on the rise. This offers manufacturers new opportunities to provide sustainable solutions for plant-based and vegan substitutes.

The microtrends that have emerged from this are Blended Benefits, Vegan Delight and Lighten Up.

Sensory Novelty

Food experiences that can activate the senses are a rising phenomenon. This creates an opportunity for contrasting flavours, textures and temperatures brought about by new and peculiar food ideas that turn eating into an adventure.

The two accompanying micro-trends are Tales of Texture and Creative Contrast.

“As we enter the new year, the food industry has to continue to adapt and evolve to meet the changing needs of consumers and the market. From sustainable sourcing and plant-based options to advancements in technology, the food industry is poised for innovation and growth in 2023,” said Jules Kramer, Global Marketing Director Industry at FrieslandCampina Professional.

According to Kramer, FrieslandCampina aims to work with businesses to find the best ingredients for their applications, inspire them with the latest trends and provide them with customised solutions.
