Cold pasteurisation of smallgoods, meals, beverages and a variety of produce is gaining momentum across the globe. Rather than traditional pasteurisation methods based on temperature, high pressures up to 600 MPa can be used instead. Use of high-pressure pasteurisation can extend shelf life, reduce reliance on preservatives and inactivate foodborne pathogens while maintaining colour, flavour and fresh-like characteristics.
