Microwave tempering system
Food Processing Equipment (FPE) has delivered an AMTek microwave tempering system to George Weston Foods (GWF) in Castlemaine.
The AMTek system allows precise control of product temperatures for further processing such as slicing, grinding, dicing and forming. The equipment is paid for in drip loss reduction (typically 3-5%) and it eliminates blood-soaked cardboard waste, which are only some of the benefits of microwave tempering.
The AMT4400 continuous tempering system range is designed to provide automated tempering. The heart of the system is a UL-listed Allen Bradley ethernet-based PLC assembly, packaged with all the hardware needed to run the system with up to four transmitter assemblies. The software provides sophisticated controls, yet total ease of operation. The UL-listed control system provides complete control over the entire tempering process from the main Panelview 1250 display. The system software provides complete monitoring of the tempering process and allows safe and easy operation of the equipment by any operators.
The complete system is powered using up to four of the AMT7510 microwave transmitter assemblies.
Some of the advantages of using AMTek’s microwave tempering equipment include: full stainless steel construction for hygiene and cleaning; complete system control from the oven controls including support conveyor, chiller, blow-off, washer assemblies; reduction in raw materials levels by reduced tempering times; reduction in raw material handling requirements; and improved quality and yield since drip loss is minimised.
AMTek’s product scope includes continuous tempering systems, batch tempering systems, booster oven assemblies, continuous modular cooking systems, standalone transmitter assemblies and PLC control systems that range from the very largest of systems to units that suit the smaller processor.
This equipment is all available through FPE and extends the company’s industry reach as it is suitable for use in fruit, vegetables, cheese and dairy products as well.
