Microbial assay for wine spoilage

South Australian wine technical consultants Provisor and Advanced Analytical Australia have teamed up to deliver a DNA-based spoilage evaluation service to the wine industry in Australia and New Zealand.

Developed by ETS Laboratories in the US, the Scorpion assay detects spoilage microbial organisms in grape juice and wine.

The technology gives the wine industry the ability to detect spoilage organisms, such as bacteria and yeast, quickly and at low concentrations (10 cells/mL). Coupled with volatile metabolite analysis (such as 4-EP or 4-EG) and in conjunction with traditional plating analysis, this technology offers a suitable tool in monitoring potentially harmful organisms and their spoilage metabolites.
