'Free-from' product in Sirane packaging scoops top industry award

A ‘free-from’ product that takes advantage of a Sirane food packaging solution has won a top award at the Baking Industry Awards held in London earlier this month.

The Incredible Bakery Company’s ‘incredible onion panini’ emerged triumphant in the Free-From Bakery Product of the Year category with the award presented to director Valeria Mizuno-Turner, who founded the bakery to solve her son’s food allergy problems.

“We strive to create products with equivalent taste, moistness, appearance and nutritional qualities as conventional products and we avoid all 14 common food allergens so everything we produce at the bakery is suitable for coeliacs and vegans,” she said.

“For this product we wanted something with flavour. It’s low in saturated fat and high in fibre, and ingredients include onions, white and brown rice flour, chickpea flour, rice bran and potato and tapioca starches. Everything is freshly baked.”

The ‘free-from’ products are packed into Sirane oven/microwave cooking bags and then heat-sealed, before being shipped into stores, delicatessens, farm shops and restaurants. As the product can be heated in the packaging, any cross-contamination is avoided.

“The Incredible Bakery Company has found a great use for our cooking bags and it allows them to make, transport and heat the food without any fear of cross-contamination, vital when it is a ‘free-from’ product,” said Jeremy Haydn-Davies, Sirane sales director.

“The product can even be made and frozen in the bag for up to three months for subsequent reheating or defrosting, depending on the intended final use of the product. It’s a great story of how problems with food allergies became a successful business.”
