MAP packaging's negative impact on beef tenderness comes as a bombshell

The red meat industry has been rocked by an unexpected discovery that a popular form of retail meat packaging appears to have a serious negative impact on tenderness performance in both beef and lamb. MAP packaging has been shown to have more than twice the toughening impact of HGPs on beef in recent MSA research.
